Hot smoked salmon and mango noodle bowl

Salmon noodle bowl

Ingredients (serves 2)

  • 100g dried rice noodles
  • 2 tbsp lime juice
  • 2 tsp maple syrup
  • 1 red chilli, deseeded and finely chopped
  • ΒΌ cucumber, thinly sliced
  • 125g cherry tomatoes, halved
  • 1 mango, peeled and thinly sliced
  • 150g cooked smoked salmon fillet,
  • flaked Fresh coriander to serve, optional


  1. Place the noodles in a large heatproof bowl. Cover with boiling water and set aside to soak for 5 minutes, or until softened. Drain well.
  2. Combine lime juice, maple syrup and chilli in a small bowl
  3. Divide noodles, cucumber, cherry tomatoes, mango and salmon between two serving bowls.
  4. Drizzle over the dressing and add some coriander

We should be trying to include at least 2 portions of fish each week in our diet, including one oily fish. (such as salmon)
